1/2 kg chicken breast
1 tbsp of garlic paste
1 1/2 cup of plain curd
1 tsp of crushed black pepper
Salt to taste
2 tsp of lemon juice

For Chutney :

1 cup mint leaves
1/2 cup of coriander leaves
2 green chilies
salt to taste
2 1/2 tbsp of water

Method :

For making the chutney mix all the ingredients and water and grind well to make a fine paste . Set aside . Mix salt, garlic paste, lemon juice, curd, pepper in a bowl . Clean the chicken wings well . Be sure to remove any remnants of fat from the pieces . Add the chicken to the bowl and coat with the marinade on all sides .

Now cover the bowl tightly and refrigerate overnight or at least for 5 hours . Remove from the bowl, wipe everything leaving just a thin coat of marinade on the chicken pieces .

Grill on all sides for 10 minutes a side or till the chicken is tender and serve hot with lemon juice and chat powder sprinkled on the pieces , mint and & coriander chutney and sliced onions . Be careful not to char the chicken .

Ingredients :

1/2 kg of Lamb ( leg portion )
1/3 cup of Olive oil
1/2 kg of diced onion
2 Tbsp of garlic paste
1 Tbsp of Turmeric
1/4 Tsp of Nutmeg
1 Tbsp of ground cardamom, cinnamon
1 Tsp of crushed red pepper
2 medium tomatoes ( chopped )
1 cup of rich beef stock
300 gms of spinach ( washed well and drained )
1/2 cup of fresh curd
1 Tbsp of grated lemon peel
Salt to taste
1/4 cup of Pine nuts (Roasted well )

Method :

Brown the lamb in the olive oil in a pot on a high flame .Now add the onions to it and saute them for some time . Add the garlic to this and fry for about a minute.

When it becomes brown add the turmeric, nutmeg, cardamom, crushed red pepper and cinnamon and fry them together for some more time . Add the tomatoes and the beef stock to this and stir. Cover the dish with a lid .

Set the microwave or oven at 350 F and cook this for about an hour till the meat becomes tender and begins to break up. Now remove from the oven and add the spinach .

The spinach will turn limp and slowly will get blended with the gravy .When the gravy is comparatively cooler the lemon peel , salt and curd is to be added to the gravy . And finally the roasted pine nuts are to be sprinkled all over it .
