Ingredients

1 kg of chicken, skinless and boneless, made into medium pieces
500 grams of fine grained, scented rice
2 dried limes, finely chopped
250 grams of fresh tomatoes
250 grams of onions
14-15 cloves of garlic, finely chopped
1 tbsp of fresh coriander leaves
50 ml olive oil
Salt to taste
2 tbsp of a mixture of 1 teaspoon of cardamom seed, 1 teaspoon of black pepper and 1 teaspoon of cumin seeds
2 tbsp of chopped almonds
1 tbsp of sultanas

Ingredients for the sauce

250 grams of fresh tomatoes
100 grams of fresh mint leaves
Salt to taste
50 grams of green chili peppers
Water as required

Method

Slice the onion and the garlic into fine pieces. Cut the tomatoes into wedges and set aside and then finely chop the fresh coriander leaves. Mount a heavy, deep skillet on medium heat. Add the oil to it and when it becomes heated add the onion slices and garlic pieces to the skillet. Sauté this over medium heat for about 5 minutes.

When the onions turn golden brown in color then add the chicken pieces to the skillet and combine. Cook this for an additional 5 minutes before adding the rice to the chicken. Combine all the ingredients well and sauté for about 3 minutes. Then add in the wedges of tomato, the mixture of spices, the salt and the dried limes and mix well with the chicken and rice. Let is cook for a minute or two and then add just enough water so that it covers the rice mixture. Cover the skillet with a lid and set to a boil on medium heat. When the preparation begins to boil turn down the heat to low and let it simmer for about 20 minutes.

After that remove the skillet from the heat and add the sultanas and the chopped almonds and stir well. Cover the skillet again and leave it for another 10 minutes. Remove the lid and stir again before serving. Serve hot along with the sauce and flatbreads.

The Sauce:

Skin the tomatoes and chop them into small pieces. Transfer all the ingredients for the sauce to a food processor and process till it forms a mixture of uniform consistency. Adjust seasonings as per taste.
