Ingredients:

1 packet of Pasta
8 Asparagus Sprigs
4 Chicken breasts, skinless and boneless
2 tsp of Olive oil
½ tsp of Basil
½ tsp of Oregano
Salt to taste
Pepper to taste
½ cup of Parmesan cheese
2 tsp of White wine

Method:

Take a pan and boil some water in it adding 1 tablespoon of salt to it. Add the pasta to the pan of boiling water and cook for about 8 minutes. Trim the Asparagus and cut them into 2-inch pieces. Set aside in a bowl. The chicken pieces are to be cut into strips. Heat some oil in a frying pan over medium heat. Add the chicken strips and saute for about 3 minutes. Then add the wine, the cheese and seasoning to the chicken and combine. Add the Asparagus pieces to the pasta in the boiling water in the last few minutes of cooking. When done drain the pasta and the asparagus. Toss with the fried chicken strips and serve hot.

Asparagus with Fried Eggs

Serving: 4 Persons
Prep Time: 10 minutes
Cooking Time: 10 minutes

Ingredients:

2 pounds of asparagus, cut into 5 to 6-inch pieces
1/2 cup of freshly grated Parmigiano-Reggiano cheese
4 tablespoons of butter
4 eggs
Salt to taste
Freshly ground black pepper to taste

Method:

Cut off the tough ends of the asparagus. Mount a pot of water on the heat and add 1 tablespoon of salt to it. When the water starts boiling, add the
asparagus pieces and cook for 4 to 5 minutes until they are just crisp-tender. After that remove the pot from heat and remove the asparagus pieces, using a slotted spoon, on thick paper towels until they are ready to serve. Divide the asparagus into 4 serving plates.

Heat the butter in a medium-size frying pan over medium heat. Break and slip the eggs into the pan. Reduce the heat to low and cook for 3 minutes till the whites are set but the yolks are still runny. Remove the eggs to the serving plates using a wooden spatula and place on top of the asparagus. Be very careful with the eggs or you will break the yolks. Add the grated cheese on top of each plate of asparagus.

Brown some more butter in a frying pan and pour the browned butter over the top of the eggs. Season the dish with salt and the freshly ground pepper and serve immediately.
