Ingredients
1/2 cup of dried cherries, coarsely chopped
5 tbsp of chopped almonds
1 1/2 tbsp of wheat germ
1 1/2 tbsp of brown sugar, firmly packed
1 tsp of ground cinnamon
1/4 tsp of ground nutmeg
7 small Golden Delicious apples
3/4 cup of apple juice
1/2 cup of water
2 1/2 tbsp of dark honey
3 tsp of walnut oil

Method
Preheat the oven to 350 F. Toss together in a large mixing bowl the cherries, the almonds, the brown sugar, the wheat germ, the cinnamon and nutmeg powder till all the ingredients are evenly coated with the spices. Set the bowl aside. Now to decorate the apples use a vegetable peeler or a sharp knife to peel the apples. Remove the peel from each apple in a circular motion, skipping every alternate row so that it gives an appearance of rows of peel alongside rows of apple flesh.

Work from the stem end and core each apple to stop when it is 3/4th of an inch from the bottom. When done set the apples aside in a bowl. Now divide the cherries and almond mixture evenly among the decorated apples. Press the cherry-almond mixture gently into each of the cavity of the apples. When done arrange the apples in an upright position in a small baking dish just the size to hold them. Pour the apple juice and water into the pan and pour the honey and oil over the apples, evenly.

Cover the pan tightly with an aluminum foil. Transfer the baking dish to the preheated oven and bake the apples for 50 to 55 minutes till the apples are tender. Check by piercing them with a knife. When done through remove from the oven and transfer the apples to serving plates. Drizzle with the pan juices and serve warm or at room temperature.
