Ingredients:

2 cups of fresh broccoli, chopped
2 cups of vegetable stock
1 clove of garlic, minced
½ tsp of fresh ginger root, grated
¼ cup of skimmed milk or low fat milk
¼ tsp of soy sauce, low sodium
2 tbsp of red onion, finely chopped
1/2 tsp of butter
Salt to taste
Pepper to taste

Method:

Take a pot and boil the vegetable stock in it over a medium flame. When the broth starts to boil reduce the flame to low. To it add the butter, the ginger root, the minced garlic and the broccoli and simmer till the broccoli becomes tender. Remove from heat and cool at room temperature. When the broth cools down transfer to a food processor and blend well to form a smooth liquid. Pour it back into the pot and add the milk, the soy sauce, salt and pepper and heat through. Sprinkle chopped onions and serve hot.

2) CREAMY MUSHROOM SOUP

Serving: 10 persons
Prep Time: 10 minutes
Cooking Time: 35 minutes

Ingredients:

1 tbsp of canola oil
3 leeks, finely chopped
2 cloves of garlic, chopped
1 tbsp of fresh thyme, chopped
2 pounds of sliced button mushrooms
4 cups of chicken stock
1 can of Carnation Evaporated Milk
Salt to taste


Method
:
Heat oil on medium heat in a large pot. Cook the leeks, the garlic and the thyme for 5 minutes, until all become tender. Add in the mushrooms, cook on medium heat until the mushrooms are cooked thoroughly. Add the stock, and bring it to a boil, covered. Lower the heat and cook for 20 minutes. Cool the broth at room temperature and transfer the contents to a food processor and blend well. Pour back to the pot , over medium flame and add in the can of Carnation to the pot. Adjust seasonings as per taste. Garnish with sauteed mushroom slices and serve hot.
