Ingredients:

For White Dough:

3 ¼ cups of flour;

¼ ounce of dry yeast;

A cup of water (warm);

1 tsp sugar;

Olive oil;

Salt to taste

OR

For Whole Wheat Dough

3 ¼ cups of flour;

2 cups of whole wheat flour;

¼ ounce of dry yeast;

A cup of water (warm);

1 tsp sugar;

Olive oil;

Salt to taste

For Toppings:

4-5 onions finely sliced;

Olive Oil to fry onions;

1 tsp dry thyme;

6 cloves of garlic;

1 tsp drained capers;

Salt and pepper;

Bay leaf;

1 tsp pine nuts

Method Of Preparation:

1. Add yeast and sugar in water. Stir till it is dissolved. Keep the mixture aside for the yeast to form.

2. In a large bowl for kneading, mix the flour, salt and yeast together. Knead properly till it is smooth and soft. Add more flour to take away the stickiness.

3. Shape the dough into small balls and place in an oiled bowl. Keep it aside for an hour or till so that the dough doubles in weight and bulk due to the yeast.

4. Then, roll out the balls into one 16’’ pizza or two 12’’ inch pizzas.

5. In a pan, heat ¼ cup of olive oil.

6. Add onion, garlic, thyme and bay leaf. Stir them together.

7. Keep on the heat till the moisture evaporates or till the onion has become soft and caramelized. This procedure may take about 45-50 minutes to complete.

8. Later, take out the bay leaf and discard it.

9. Season well with salt and freshly ground pepper.

10. Spread out the cooked topping evenly on the pizza crust.

11. Sprinkle the pine nuts and capers evenly.

12. Pre-heat the oven to 500 degree and put in the pizza to cook for 10 minutes (time depends on the platter you have placed the pizza) or until golden brown.

13. Add more toppings if one likes to to make it more relishing.
