Ingredients:

4 chicken breast halves, De-skinned and boneless

3 tbsp of honey

3 tbsp of lemon juice, should be fresh

2 tsp of grated lemon peel, freshly done

1 ripe mango, peeled and diced

1 small onion, quartered

2 jalapeno peppers, halved and seeded

2 tsp of paprika

2 tsp of olive oil

1 1/2 tsp of garlic salt

1/2 tsp of ground cinnamon

1/2 tsp of ground black pepper

1/2 tsp of ground allspice

1 tbsp of vegetable oil

Method:

Take a small bowl, add the honey, lemon juice and lemon peel and whip briskly to blend well. Now from this set aside 1/4 cup to food processor container. To the remaining mixture in the bowl add mango pieces and toss to coat evenly. Refrigerate the mixture. Now add onion, jalapenos, paprika, oil, garlic salt, cinnamon, pepper and allspice to the honey-lemon mixture kept in the food processor container and process till they are very finely chopped. Now evenly spread the mixture over all sides of the chicken breasts. Grease a 13 x 9-inch baking pan and arrange the chicken breasts in the pan. Bake at 375 F for 30 minutes. Remove from oven and serve with the refrigerated spiced mango pieces.

Puerto Rican Chicken and Rice

Serving: 8 Persons

Prep Time: 15 minutes

Cooking Time: 1 hour and 20 minutes

Ingredients:

A 3 pound broiler-fryer chicken, cut up

1 tsp of dried oregano

1/2 tsp of ground coriander

1/4 tsp of pepper

1 can of stewed tomatoes

1 medium onion, finely chopped

1 clove of garlic, crushed

1 cup of uncooked rice

1 packet of frozen green peas

1 medium green bell pepper, chopped

1/2 cup cubed smoked ham, fully cooked

1/3 cup of pitted small green olives

1 tbsp of capers

2 tsp of salt

2 cups of water

Grated Parmesan cheese

Method:

Place the chicken in a Dutch oven. Sprinkle all over with salt, oregano, coriander and pepper. To this add water, tomatoes, onion and garlic. Bring to a boil and reduce the heat. Then cover and let simmer for 30 minutes. After that add the rice to the liquid. Again cover and simmer till all the chicken pieces are thoroughly done for about another 25 to 30 minutes.
When done add the peas, green pepper, ham, olives, capers and 1 tablespoon of caper liquid to the chicken. Cover and simmer for an additional 5 minutes. Serve with Parmesan cheese.
