Carrot Cake Recipe

Now don’t be guilty of eating a CAKE. This healthy recipe combines apples, raisins, walnuts, and wheat flour with carrots to offer a complete healthy cake to take your guilt away.

Cooking time: 45 minutes
Serves: 4–5

• Carrot (finely grated): 2 cups
• White flour: 1 cup
• Whole wheat flour: 1 cup
• Eggs (with white): 4
• Sugar (finely grinded): 3/4 cup
• Apple (peeled and finely grated): 1.5 cups
• Vegetable oil: 1 cup
• Salt: 1 tsp
• Baking soda: 1.5 tsp
• Cinnamon powder: 2 tsp
• Raisins: 1 cup
• Walnuts: 1/2 cup


1. Take a deep pan and mix together eggs, vegetable oil and sugar till you get a thick solution.

2. Sift both the flours together 2–3 times along with salt, cinnamon powder and baking soda.

3. Add the flour mixture to the thick egg solution in little quantities and stir continuously to avoid making lumps. Note: Remember to stir only in one direction to make your cake spongy.

4. Once the flour mixes in the egg solution, add apple, carrot, raisins and walnut. Again stir continuously (in the same direction as in Step 3) till you obtain a fine mixture.

5. Grease a pan with little oil and sprinkle some flour in it. Now add the mixture to the pan and bake it at 350 F for 30–45 minutes.

6. Take the cake out of the oven and check for doneness with a knife. Insert a knife in the centre of the cake and take it out. If the knife comes out clean, your cake is done; else, put it in the oven for another 10–15 minutes or till the cake is done.

7. Allow the cake to cool and cut desired-shaped pieces.

For making a cheese icing, you need 1 cup icing sugar, one-fourth cup softened butter and 4 ounces cheese. Nicely blend the three together in a blender and spread on the cake.Your moist, spongy carrot cake with a special cheese topping is ready to be served.
