Chicken Fajita

Serving: 4 persons

For the marinade:

300 grams of chicken, skinless and boneless and cut into small pieces
10 grams of cumin powder
4 grams of red chili powder
30 grams of chopped onion
10 grams of chopped garlic
Salt to taste
4 grams of ground white pepper
40 ml of olive oil
10 ml of fresh limejuice
10 ml of Lea & Perrins sauce
10 ml of Tabasco sauce

For the fajita:

10 grams of white onion rings
4 pieces of 8? flour tortilla
5-6 tbsp of shredded lettuce leaves
2 tsp of salsa
2 tsp of guacamole
Oil as required

Wash the pieces of chicken thoroughly. Now cut them into thin strips and keep them in a mixing bowl. Add all the ingredients for the marinade to the chicken and mix them together. Cover the bowl and set to marinate for about 1 1/2 hours. After 1 1/2 hours set a pan on medium flame with about 2 tablespoon of oil in it. When it is heated add in the marinated chicken strips and sautee. When the color of the chicken strips becomes golden brown in color add in the onion strips and sautee for an additional 4-5 minutes.

When the color of the onion rings becomes golden brown remove the pan from heat. In the mean time preheat the oven to 180 degrees C. Put the tortillas in the oven and heat through for about 10 minutes. Keep them wrapped in aluminium foil to keep them warm. Prepare the sizzler platter. Heat the cast iron platter till it is really hot. Now add in a dollop of butter till it smokes. Transfer the cooked chicken strips and onion rings to the platter and cook for about 2 minutes on both sides.

When done spoon a helping of the chicken strips on the centre of each tortilla. Put a little of the guacamole, the salsa and lettuce on top of the chicken and fold the sides of the tortilla over them to wrap up. Serve hot.
