Boiled Dumplings

Ingredients

500-gram flour
300-gram minced boneless mutton or pork
6 tablespoon scallions or green onions, finely chopped
2 teaspoon ginger, finely chopped
1/8 teaspoon Chinese five-spice powder
½-teaspoon monosodium glutamate
Salt to taste

Method of Preparation

Preparing the Filling

Boil the minced mutton of pork in 200 ml water. Add ginger, monosodium glutamate and salt and occasionally stir the mixture. When the mixture becomes like a paste, add the scallops and blend the paste for a few more minutes and your filling is ready.

Preparing the Wrapper

Add about 100 ml of water to 500 g flour to make the dough. Knead until the dough becomes smooth. Keep the dough aside for ½ hour. Now divide the dough into four portions. Cut each of the portions into twenty-five pieces. Flatten each of the pieces and use a roller to roll the pieces into circles of about 5 cm diameters.

Now put some filling at the center of each wrapper and fold the dough around the filling, in the shape of a pouch. Seal the edges of the pouch. After you have finished making all the pouches, add about 2 liters of water in a container and bring the water to boil. Add the dumblings, stir occasionally, and bring the water to boil. After a few minutes, add some cold water so that the water stops boiling. Now allow the water to boil again. Repeat this process of adding cold water and re-boiling, once more. When your dumplings are properly cooked, they will float to the surface.

Besides using minced mutton in the filling, you can also use minced pork, chicken, beef, shrimp or vegetables.

You can serve the dumplings with hot stew or soups.
