Chinese Pan Fried Noodles

Ingredients
8 ounces of chicken breast
½-pound rice noodles
8-tablespoon sesame oil or any other vegetable
2-teaspoon dark soy sauce
One medium sized green onion
One clove of garlic
One cup shredded cabbage
½-teaspoon cornstarch
Salt and pepper to taste
For a more authentic flavor you will need 2 teaspoons of Chinese rice wine and 1 tablespoon of Hoisin sauce diluted with 1 ½ tablespoons of water.

Method of preparation

Cut the chicken breast into small pieces. Marinate the chicken with dark soy sauce, Chinese rice wine, cornstarch, salt and pepper. Keep it aside for half an hour.

Boil the noodles, until they become tender. Add a few drops of oil to the water so that the noodle strands do not stick to each other. Drain the noodles and rinse them with cold water. Drain the water and toss the noodles with a tablespoon of oil.

Now slice the green onion and mince the garlic.

Take a frying pan and heat about 3 tablespoons of oil on high heat. When the oil becomes hot, add the garlic and fry for a few seconds. Now add the chicken pieces and stir until they become soft. Remove the fried chicken from the pan. Now heat about two tablespoons of oil in the pan. When the oil becomes hot, add the green onion and cabbage and stir for about two minutes. Add a little soy sauce and remove the ingredients from the pan.

Now heat 2 tablespoons of oil in the pan. When it becomes hot, add the noodles. Stir-fry the noodles on high heat. Now add the chicken, cabbage and green onion to it. Add Hoison sauce and a dash of soy sauce. Add salt to taste. Stir for about two minutes and your Chinese pan fried noodles is ready.
