1. African barbecue pork:


2 tablespoons vegetable oil

2 cups boiling water

½ cup dried apricots

1 cup onion (sliced)

½ teaspoon curry powder

1 teaspoon brown cooking sauce

1 tablespoon brown sugar

2 teaspoons salt

½ clove garlic (minced)

2 pounds lean boneless pork

¼ cup vinegar


1. In a saucepan pour boiling water over apricots and allow it to soak for 3o minutes then cook until tender. In other pan heat oil then put onion in it and fries for 10 minutes. When apricots are done mash them with potato masher, then add onions, curry powder, brown sauce, salt, brown sugar, garlic and vinegar in it. Bring to a boil and remove from heat.

2. Cut pork into cubes and places in a baking dish then pour sauce over pork and cook for 1 hour 15 minutes, basting meals several times with sauce. Serve while hot.

2. Crabmeat au gratin recipe:


1/3 cup unsalted butter

1 large onion (chopped)

1 medium celery stalk (chopped)

2 egg yolks

½ cup all purpose flour

2 can (12 ounce) low fat evaporated milk

¾ teaspoon salt

½ teaspoon cayenne pepper

¼ teaspoon black pepper

1 pound fresh crabmeat

1 cup shredded cheddar


1. Put skillet over medium heat and melt butter, then add onion, celery in it and cook for 6 minutes while stir frequently. Add flour and cook for 2 minutes. Gradually add milk in it then put a cup of milk mixture to beaten egg yolk and stir well. Pour egg mixture into milk mixture in pan then add salt, cayenne and black pepper in it. Cook for 5 minutes or until thickened and make a sauce. During the whole process stir frequently.

2. In a medium bowl put crabmeat then add sauce and mix gentle and sprinkle with cheddar. Now bake uncovered for 25 minutes or until cheese melts and begins to lightly brown.

3. Luscious spicy red cabbage recipe:


2 tablespoons butter

1 pound red cabbage (chopped)

½ cup unpeeled apple (chopped)

¼ cup onion (chopped)

1 tablespoon red wine vinegar

1/8 brown sugar

Salt & pepper 9according to taste)


1. In a saucepan melt the better and fry cabbage, apples and onion for 20 minutes and stir occasionally then add the vinegar and brown sugar in it and cook 2o minutes more or until the vegetables are soft.

2. Pour the vegetable mixture into the dish and refrigerate for overnight. In the next day preheat the oven to 325 degree and bake for 45 minutes. Serve while hot.
