The food is made from local ingredients that include some pungent herbs, sun ripened fruits and vegetables, grains, pulses, high protein lean meat, olive oil and wine.

Therefore, Cypriot food is a perfect example of Mediterranean diet, which is considered one of the healthiest diets of the world. Here are a few recipes of traditional desserts of Cyprus.


250 grams mashed potato
1 kg flour
20-gram yeast
3 cups of water
Sugar syrup
Oil for frying


Make a batter by mixing the mashed potato, flour, yeast and water. Keep the batter aside for about half an hour, allowing the batter to rise. Now heat oil in a pan. Take teaspoonfuls of the batter and put them in the hot oil. Fry the Loukoumades until they become golden brown. Transfer the fried Loukoumades in the sugar syrup for a few minutes. Now remove them from the syrup and your potato dessert is ready.

Flaouna Pastry

This traditional Cypriot pastry is made during Easter.

To make the pastry, you need
1kg flour
3 eggs
1 cup orange juice
1 cup milk
1 cup unsalted butter
3 tablespoons sugar
1 teaspoon mastic grains
1 teaspoon cherry mahaleb grains

To make the Flaouna cheese filling you need

5 cups of Flaouna Cheese
3 cups of Halloumi cheese
1 tablespoon semolina
5 eggs
1 tablespoon sugar
1 cup of raisins
1 ½ tablespoon baking powder
6 teaspoon mastic grains
6 teaspoons cherry mahaleb grains
8 teaspoons chopped mint


Mix the Flaouna cheese, Halloumi cheese, semolina and baking powder. Add the mastic grain, cherry mahaleb grain, sugar, raisins, mint and beaten eggs to make a paste. Keep the filling aside for a few hours.

To prepare the pastry blend the sugar and butter. Now add beaten egg, flour, baking powder, mastic grains, mahaleb grains, milk and orange juice to make dough. Roll out the dough. Cut small squares 10 to 15 cm long and around 5 mm thick. Put some cheese filling in the center of the square and seal its edges. Arrange the pastries on a greased baking tray and place the tray in a preheated oven.

Bake the pastries for around 20 minutes at 150-Celsius temperature, until they become brown. Now remove the pastries from the oven and allow them to cool. Refrigerate them before serving.
