1. Blueberry buckle cake:

Ingredients:

¾ cup granulated sugar

1 egg

¼ cup vegetable shortening

½ cup milk

2 cups all purpose flour

2 teaspoon baking powder

½ teaspoon salt

2 cups fresh blueberries

Method:

Oven temperature: 375 degree

Baking time: 30 minutes

1. In an electric mixer, cream together sugar, shortening and egg. Take another bowl and mix flour, baking powder and salt. Stir into sugar mixture with milk.

2. Now stir into blueberries and pour into baking pan.

3. For topping: Mix ½ cup sugar, 1/3 cup flour, ½ teaspoon ground cinnamon and ¼ cup butter, then sprinkle evenly over cake batter.

4. Wooden pick inserted into center and bake until it comes out clear.

2. Orange sponge low-fat cake

Ingredients:

7 large eggs

1 large whole egg

2/3 cups plus ½ cup superfine sugar

1 teaspoon grated navel orange rind (fresh)

1 teaspoon grated lemon rind (fresh)

¼ cup navel orange juice (fresh)

1 cup plus 2 tablespoon sifted cake flour

7 large egg whites

¼ teaspoon salt

1 teaspoon cream of tarta

Method:

Oven temperature: 325 degree

1. In the small box of electric mixer fitted with beaters put yolk and whole egg in it then whip on medium speed for about 2 minutes. Now add 2/3 sugar and blend it well for 6 minutes.

2. Reduce mixer speed and adds the grated rind and orange juice then beat for 1 minute. Reduce mixer speed again, add flour and mix until incorporated. Remove the bowl from the mixture and pour yolk mixture to a large mixing bowl.

3. Put mixer on the large bowl and whip whites at medium speed until frothy, then adds salt and cream of tartar. Increase your mixer speed and beat until the whites from soft peaks. Now gradually add ½ cup sugar and beat 3o seconds more to form a glossy soft meringue.

4. Take 2 ¾ inch wide rubber spatula and fold ¼ of the meringue into the yolk mixture then take 20 turns to incorporate the two together. Gently spoon the batter into the pan twice to remove any air pockets. Smooth the surface again.

5. Now bake for 45 minutes then remove the cake from the oven and immediately put into a refrigerator. Let the cake cool completely in the pan.
