Ingredients

All-purpose flour -1 1/2 cups

Baking powder – 2 tsp

Salt – 1/4 tsp

White sugar – 1 cup

Chopped dried cherries – 1/2 cup

Hot water – 1/2 cup

Almond extract -1/2 tsp

Vegetable oil – 1/2 cup

Vanilla yogurt – 8 ounces

Egg – 1

White of 1 Egg

Chopped pecans 1/4 cup

White sugar -1 tsp

How to Prepare Dried Cherry Cake

First of all pour cherries, almond extract in the hot water in a bowl. Leave the mixture to stand for about 20 minutes. Then take out the cherries and strain them. Pat dry cherries by the paper towel. Keep then aside.

Set the oven for preheating at 350 degrees F (175 degrees C) and grease and flour a 9” round pan.

Now take another bowl and pour flour, 1 cup white sugar, salt and baking powder. Mix them thoroughly. Add eggs, yogurt and oil to the mixture.

Blend the mixture very well using cut and fold method. Now it is the turn of cherries. Pour cherries in the mixture and fold in.

Batter for the cake is ready now. Take the greased cake pan and pour in the batter.

Mix together pecans and 1 tbsp white sugar together. Sprinkle it at the top of the batter.

Bake the cake for about 35 minutes at 350 degree C. You can check for its preparedness by pricking a toothpick. If it comes out clean, your cake is ready. After baking, let the cake cool in the pan for 10 minutes. You can serve hot or at room temperature.
