Ingredients required:

½ Kg Spinach
1 medium size onion
3 cups water
1 cup milk
50 grams cheese
Salt to taste
½ teaspoon sugar
2 slices whole wheat bread
1 teaspoon butter

Method and preparation

1. Wash, clean and cut the spinach leaves finely and chop the onions.

2. Melt the butter in a pan and saute the onions till they are golden brown.

3. Add the spinach, salt sugar, bread (mashed) and water, bring to boil.

4. Rub the mixture through a strainer. Add the milk to the strained mixture and re-heat.

5. Serve hot with grated cheese sprinkled over each cup.

Tomato Soup

This soup is delicious, easy to make, rich, nutritious and a favorite amongst most.

Ingredients required:

10 medium sized tomatoes
1 piece ginger
2 to 3 carrots
1 to 2 tablespoons cornflour
1 ounce butter
Salt to taste
1 cup milk
5 cups water

Method and preparation:

1. Cut the tomatoes into small pieces, chop the ginger and grate the carrots.

2. Put all the chopped ingredients in a pot with water and bring to boil. Strain the mixture after it has boiled.

3. Heat butter in a pan, ass the cornflour in it, brown lightly, take it off the stove and add the milk.

4. Put the milk and cornflour mixture back on the fire, add the vegetable puree to it and simmer. Cook till it thickens, stirring it constantly for 2 to 3 minutes.

5. Serve garnished with croutons.

Mushroom Soup

Ingredients required

250 grams mushrooms
3 cups water
1 cup milk
2 tablespoons flour
2 tablespoons butter

Salt and pepper to taste

Method and preparation:

1. Wash and chop the mushrooms.

2. Melt the butter in a pan, saute the mushrooms for about 2 to 3 minutes, stirring constantly.

3. Add the flour and cook for 1 to 2 minutes.

4. Remove the pan from the fire and gradually add the water and milk. Bring to boil and cook until it thickens.

5. Remove from the fire, season and serve hot.
