Ingredients

1 pound of ground beef
1/2 cup of minced onion
1 large clove of garlic , minced
2 large tomatoes, chopped
1/8 tsp of pepper powder
1 egg, lightly beaten
2 tbsp of breadcrumbs
10 ounces of okra, cooked and drained
4 tbsp of butter
lemon slice, for garnish

Method

Preheat the oven to 375F. In the meantime take a large deep-bottomed frying pan and brown the beef over medium heat. Add onion and garlic to this till they become tender. Strain off the fat and add the tomatoes and cook till they become soft. Then add the pepper, egg, and bread crumbs and stir well. Reduce heat, simmer for sometime, stirring continuously.
Meanwhile, grease a 1 quart casserole and arrange the okra so that the tips are facing towards the inside. Now spoon the meat mixture into the center.
Bake for 35 minutes at 375 degrees F. Allow it to stand for 10 minutes and then invert the contents onto a serving platter, garnish with lemon slices before serving.

Baked Minced Beef

Serving: 8 Persons
Prep Time: 15 minutes
Cooking Time: 35 minutes

Ingredients:

2 1/4 pound of minced beef
2 onions, finely chopped
2 tbsp of tomato paste
1/2 tsp of nutmeg or cinnamon
4 ripe tomatos
salt to taste
Pepper to taste

Method:

Take a bowl and add the chopped onions and the minced beef to it and mix them together. To this add the tomato paste, spices and seasonings. Again mix well and spread on an oven pan or baking dish, to form a 2 inches thick layer. Cut into 4 inches square sections. Peel the tomatoes, finely slice them and place on the meat. Bake in a preheated 350F oven for 35 minutes. Serve hot.

Kanduza

Serving: 8 Persons
Prep Time: 15 minutes
Cooking Time: 1 hour, 15 minutes

Ingredients

2 pounds of small pieces of beef
5 medium sized onions, sliced finely
2 pounds of tomatoes, sliced
1 tbsp of cornflour
4 tbsp of vegetable oil
Salt to taste
Pepper to taste

Method

The beef is to be sliced into 1 inch thick pieces and then pound to tenderize. Take a pot, place the meat alternating with layers of onions and tomatoes and sprinkling each layer with the seasoning. Press hard to weigh down . Now add a cup of water. Place on heat and cook over low flame for 40 minutes. After that separate the beef from the vegetables and fry it.

Remove from heat and place on a platter and be sure to keep it warm. Blend the cooked vegetables with their juices in a blender or food processor, strain and return to the pot. Check the seasonings, stir in the cornflour and cook for an additional 2 to 3 minutes before spreading it over the beef.
