Fried Empanada

3 cups of flour

1 egg

½ cup water

1 cup of lard

Method of preparation

Beat the egg properly. Add it to the flour. Now add lard to the flour and mix them properly. Slowly add water to form dough. Knead the dough to make it soft and elastic. Keep the dough aside for about half an hour.

1 pound of lean chicken or beef

2 large onions

2 scallions

3 hard boiled eggs

1 tablespoon of paprika

½ cup of chicken stock or water

3 tablespoon of oil

Salt to taste

Method of preparation

Slice the onions and the scallions. Finely ground the meat. Put oil in a pan and put the onions. Fry the onions until they turn brown. Now add the ground meat and stir for about ten minutes. Now add the scallions. Add paprika and salt and stir well. Pour the water. Stir the ingredients, until the meat becomes soft and a thick paste is formed. Remove the filling from the fire and add sliced hard-boiled eggs to it.

Preparing the Empanada

Roll the dough on a flat surface. Now take a small bowl to cut the dough into small circles. Now put a tablespoon of filling on each of the circle. Now close the dough around the filling. Moisten the edges of the circle with little water and seal the wrappings. Now heat oil or lard in a pan. Put the Empanada in the oil and fry them. Take the Empanadas out of the oil when they become light brown in color.

If you want to avoid the extra oil, you can also bake empanadas, instead of frying.
