Fish Kebabs Recipe

If you’re a seafood lover, you are sure to love this recipe. Though the headline sounds old and boring, it’s really not and instead is a brilliant light snack with a new grilled twist that you can gorge on without worrying about gaining weight. Don’t trust us? Try it out…

Ingredients

For kebabs
Fish fillet – 500 gms
Lemon juice – 1 tbsp
Fresh button mushrooms – 12
Fresh lychees – 12
Black grapes (seedless) – 15
Olive oil – 1 tbsp

For sauce

Ginger – 1 inch piece
Garlic – 2 cloves
Soya sauce – 2 tbsp
Crushed pepper corn – 1 tbsp
Red wine (optional) – 2 tbsp
Honey – 2 tsp
Olive oil – 1 tbsp

Method

Clean the fish and cut into equal size cubes. Apply lemon juice to it and keep aside.Now, wash and cut the mushroom stems. Sauté the chopped mushrooms in a non-stick pan for 2 minutes. Then, cover the pan with a lid.Toss them occasionally. Strain and keep the mushrooms aside. Also, keep the cooking liquor aside for the sauce. Peel the lychees, deseed them and keep aside. Also, wash the grapes and keep aside.Now, peel, wash and finely chop the ginger and crush the garlic. Heat oil in a non-stick pan, add garlic and ginger and cook for a few seconds on medium heat.

Add soya sauce, crushed pepper corn, reserved cooking liquor, red wine and one fourth cup water and bring to boil. Add honey to it and mix well for two minutes. Lower the heat and simmer gently for another two minutes. Now, keep the pan aside until the kebabs are ready. On a wooden skewer, skewer fish, cooked mushrooms, black grapes and lychees onto it. Then, brush the skewer with olive oil and grill it for ten minutes. Alternately cook it in a pre-heated oven (180 degrees Celsius) for about ten minutes until the fish is tender. Serve the kebabs with any spicy sauce of your choice.
