Ingredients:

300 grams of boneless fillet of white fish
4 medium potatoes, peeled
2 cloves of garlic
2 1/2 tbsp of fresh coriander
Green parsley
1 tsp of cumin powder
1/2 tsp of cinnamon powder
1/2 tsp of pepper powder
Salt to taste
1 medium onion, minced
2 beaten eggs
1 cup of bread crumbs.
1 cup of oil, for frying

Method:

Poach the fillet in salted water for about minutes. Remove and set aside. Use the water to boil the potatoes for 15-20 minutes. In a bowl take the boiled potatoes and mash them and add the cooked fillet, minced onion, crushed garlic,
chopped coriander and parsley leaves. Mix all the ingredients well adding the spices and salt to the mixture. Adjust the seasoning. Heat the oil in a frying pan. Make balls of this mixture. First dip each ball in the beaten eggs then in
the breadcrumbs and fry in the heated oil till each turns brown on all the sides. Fry in batches of five. When done remove on paper towels to soak off the excess oil.

Serve hot with salad and lemon.

KOFTA HOOT (LIBYAN FISH KOFTA)

Serving: 4 Persons

Cooking Time: 45 minutes

Ingredients:

2 white fish fillets (300 grams)
1 cup of breadcrumbs
1 tsp of kammon hoot
1/2 bunch of finely chopped coriander
1 onion, grated
1 tsp of chili powder
2 garlic cloves, crushed
1 tsp of baking powder
2 eggs, beaten

For frying:

1 egg, beaten
2 tbsp of water
Corn flour for coating
1 cup of oil

Method:

Take the fillet and check for any bones or skin. Then chop them very finely. Add the fish along with all the ingredients for the koftas to a bowl and mix them well to make dough. Shape the dough into about 12-14 sausage-shaped pieces.

Take another bowl and whisk the eggs and water together. Heat the oil in a deep-bottomed frying pan. Dip each of the pieces in the egg batter and roll in the flour before frying in the heated oil. Fry in batches of 4 till all the pieces
of koftas have been browned uniformly on all sides. Remove from oil on paper towels to soak the excess oil. Serve hot with a sauce of your choice.
