½ cup of sugar
An additional 2/3 cup of sugar
3 whole eggs
3 egg yolks
3 cups of whole milk
2 tsp of vanilla extract


Preheat the oven to 350 degrees F. Keep a dry 9-inch round or square 1½- to 2-quart baking dish ready. Take a medium pan, add the ½ cup of sugar and cook it over medium heat, stirring constantly for about 5 minutes with a long-handled spatula, until the sugar melts and turns very dark brown in color. Immediately pour the hot sugar syrup into the baking dish and swirl the pan until the bottom is coated evenly with it.

The caramel will harden in some time but will melt again when the flan bakes so, let it be for now. Take a medium sized bowl and whisk together the eggs, the egg whites and the additional 2/3rd cup of sugar till the mixture becomes smooth. Now slowly whisk in the vanilla extract and milk. Then pour the custard mixture in the prepared dish. Set the dish in a baking pan bigger than the dish and fill the pan with hot water. The water level should come up till half the height of the sides of the baking dish. Bake for 45 minutes till well done. Insert a knife through the center of the bake.

It should come out clean. The center should be slightly soft and will be done thoroughly once it is removed from the oven. First cool the water bath, and then remove the baking dish from the water bath. Refrigerate for at least 2 hours to 4 hours. Take out from the fridge and run a sharp knife around the edge to release the flan. Place a large serving plate on the baking dish and invert both dishes so that the flan and the liquid sauce settle onto the plate. Serve immediately.
