Ingredients

1 kg of lean pork, cleaned and cut into 1/2 inch sized pieces
8 cloves of garlic
1 inch piece of ginger
7-8 dried red chillies
8 peppercorns
8 cloves
1 inch piece of cinnamon
1 tsp of cumin seeds
½ tsp mustard seeds
2 medium onions, finely chopped
½ tsp of sugar
½ tsp of vinegar
2 tbsp of olive oil
½ peg of coconut feni
2 cups of water
Salt to taste

Method:

Take the pork pieces in a bowl, apply salt to them and keep aside. Grind all the spices together and in a blender blend everything with vinegar and sugar. Now mix the pork pieces well with the blended spices and marinate for 3 hours. In a pan heat the olive oil and add the marinated pieces of meat and fry it for a few minutes till it changes color. Now add the onion, coconut feni, the remaining vinegar and water slowly. Cook for sometime,stirring continuously.

After a few minutes cover the pan, reduce the flame and cook till the meat is tender, stirring occasionally. When the oil rises to the top, remove from heat. Serve hot.

PORK CURRY Recipe

Serving: 6 persons
Prep Time: 2 days
Cooking Time: 1 hour, 15 minutes

Ingredients:

675 grams of lean pork, cut into cubes
3 tbsp of olive oil
6 cloves of garlic
250 gram of onions, finely chopped
2 tbsp of fresh lemon juice
1 tbsp of a mixture of ground cinnamon, cardamom and cloves
2 tbsp of chopped coriander leaves
4 red cayenne chillies, finely chopped

For the marinade:
200 ml of red wine
2 tbsp of red wine vinegar
5 cloves of garlic, crushed
3 tbsp of finely chopped red chillies
1 tsp of coriander powder
1/2 tsp of cumin powder
1 tsp of salt

For the seasoning:
3 bay leaves
6 cloves
5 cardamom
5 cinnamon
1 tsp of cumin seeds

Method:

In a ceramic bowl, mix the meat with the marinade and refrigerate for at least two days. In a deep-bottomed pan heat the oil. Add the garlic and the spices to it and fry for a minute. To this add the onions and continue to fry for some time. Then mix this and the pork with the marinade in a casserole and place in an oven preheated to 375 F.

After 20 minutes of baking,if necessary add water to this and bake for another 25 minutes. Add some water again if required and then add the remaining ingredients. Now cook for a further 20 minutes till the pork is completely tender.
