Ingredients:

1 1/2 pounds of tubular pasta

1 1/2 pounds of ground beef

2 cloves of finely minced garlic

1 1/3 cup of finely chopped onions

2 1/2 cups of plum tomatoes (should be peeled and finely chopped)

1 1/2 teaspoons of ground cinnamon

5 whole cloves

1 cup of olive oil

Salt to taste

20 ground peppercorns (to taste)

1 1/4 cups of grated Kefalotyri cheese

1/2 cup of breadcrumbs

Béchamel sauce with cheese ( basic Bechamel sauce will also do)

Method:

For Meat Sauce:

Heat 2 tablespoons of olive oil in a large heavy-bottomed frying pan. Add the chopped onions to it and fry till they become tender.To this add the meat and continue to stir until the meat turns light brown. Add the tomatoes, cinnamon, cloves, garlic, salt, and pepper and mix well.
Reduce heat and simmer for about 35 minutes till all the liquid is absorbed. Be careful not to let the meat stick to the pan though it becomes dry. Set it aside, uncovered to let it cool. Preheat oven to 350F (160C). Lightly grease a baking or roasting pan approximately 11 X 14 X 3 inches high.

For the Pasta:

Prepare the pasta while the meat is being done. Cook the pasta in hot water adding a little salt to it.Remove from heat until slightly underdone. Drain the water and toss with a couple of tablespoons of olive oil and set aside.

For the final step:

Make the Béchamel sauce with cheese or 6 cups of basic Béchamel.

Now spread the breadcrumbs evenly on the bottom of an 11x15x3-inch baking pan. Spread 1/2 the pasta on this to form the first layer and on it sprinkle 1/2 cup of the grated cheese. Remove the cloves from the sauce and spread the meat sauce evenly over the pasta. Sprinkle with 1/2 cup
of the grated cheese. Form another layer with the remaining pasta on top. Pour the Béchamel sauce over the top and even it out with a spatula. Preheat the oven at 350F. Now bake the dish for 30 minutes. Remove from the oven and sprinkle the remaining 1/4 cup of grated cheese on top
and continue to bake for another 25 minutes until the sauce rises and turns golden brown. Remove from oven and let cool a little so that you can serve it warm.
