1 1/2 kg of flour
4 cups of extra virgin olive oil
1 cup of orange juice
1 cup of brandy
1 cup of granulated sugar
2 tsp of baking soda
1 tsp of baking powder
4 tbsp of roughly chopped walnuts
cloves, as needed
1 1/2 tbsp of orange peel, grated

For the syrup

1 1/2 cups of honey
1 1/2 cups of granulated sugar
2 cups of water
1/2 orange, chopped
1-inch cinnamon stick


Take a large mixing bowl and to it add 3 cups of the olive oil (normal temperature) and the remaining 1-cup of oil (warmed up). Add half of the orange juice to the oil. Take the other half of the orange juice and add the baking soda to it. Stir the juice and it will foam up with the soda in it. Add this to the bowl containing the oil along with the 1-cup of brandy. Use a mixer to blend this mixture for about 15 minutes.

After 15 minutes of blending add the sugar, about 1 kg of the total flour and the baking powder along with the grated orange peel. Mix all the ingredients well. If the mixture is too runny add in as much flour as required. The dough needs to be as firm as to be able to hold a shape.

Preheat the oven to a moderate temperature.
Use your hands to make small pieces out of the dough and to roll each of them into the shape of an egg. In the center of each of them place a walnut piece. Then blend around the walnut to form an oval shape. Place them on a baking tray and flatten them a little. Place one clove on the top of each. Bake for 30 minutes till they are golden brown in color. Remove from oven and let cool.

For the syrup:

Put all the ingredients for the syrup in a pan on medium heat. Bring it to the boil and then reduce the heat to low. Let the syrup simmer for about 5 minutes till it thickens. Remove from heat and let it cool a little. Then remove the cinnamon stick and orange pieces from it.

Place the cookies in a deep tray and pour this syrup over the cookies.
