This is a Greek specialty, made especially during Easter. Tsoureki can however be made any time and in any season.

Ingredients

1 kg flour
6 eggs
1 cup of butter
½ cup milk
1 ½ cup sugar
2 tablespoon grated orange rind
2 tablespoon yeast
½ cup of tepid water

Method of Preparation

Take the yeast and dissolve it in the tepid water. To this mixture add a cup of flour and blend them well. Cover it with a cloth and keep it aside in a warm place.

In a pan add butter, milk, sugar and orange rind and stir them. Now gently heat them. When the butter has melted and the sugar has dissolved in the milk, remove the pan from the fire and pour the contents in a bowl. Add it to the flour and mix well. Now add the yeast mix and beaten eggs to the flour stirring constantly to form dough. Knead the dough to ensure that it is neither too hard nor too soft. Cover the dough with a cloth and keep it aside for about two hours. After the dough has increased in size, knead it once more. Now brush it with egg and put it on a baking container. Bake the bread in a preheated over for about half an hour.

Greek Easter Cookies

Ingredients

8 cups of flour
2 cups of butter
4 egg yolks
1 ½ cup sugar
½ cup milk (you can also use orange juice instead of milk)
2 teaspoons baking powder
1 tablespoon grated orange rind

Method of Preparation

In a large bowl, sift the flour and baking powder, allowing them to mix evenly. In a separate bowl, blend sugar and butter to form a creamy mix. Add four egg yolks. Blend the ingredients well. Now add the flour and the orange rind. Slowly add the milk or the orange juice and knead with your hands to form dough. The dough should be hard. Now cut small pieces from the dough. Roll out each piece. Each piece should be shaped like narrow strips about 11 inches long. Fold each strip from its sides into a third of its size. Press the ends. Put the cookies on a baking tray and brush them with eggs. Now bake for about 20 minutes in a preheated oven at 350 degrees Fahrenheit temperature.
