Ingredients

4 chicken breasts, boneless and with skin on
2 medium sized cloves of garlic, pressed
1 tbsp of freshly made lemon juice
2 tsp of chopped fresh sage
2 tsp of chopped fresh thyme
1 tsp of chopped fresh rosemary
1/4 cup of chicken broth
Salt to taste
Cracked black pepper to taste

Method

Preheat broiler on high. Heat an ovenproof metal pan by placing it under the broiler. Only use a metal pan and not a glass or Pyrex pan for this. Take a bowl and put the chicken pieces in it. Season the chicken with a little salt and pepper. When the pan turns very hot, after about 5 minutes, put the chicken pieces in the pan and return to the broiler. Turn the heat to low.

The best is to put the pan in middle of the oven, about 7 inches from the heat source. Broil for about 15 minutes till it is done thoroughly, depending on thickness of chicken. Chop the herbs. In a separate small frying pan add the chopped herbs, lemon juice, broth, pressed garlic, salt and pepper. Heat it on medium heat for just about half a minute. When chicken is done remove the skin, slice, and place on a platter and drizzle all over with the herb sauce. Serve hot.

Apricot Chicken

Serving: 4 persons

Cooking Time: 22 minutes

Ingredients

4 chicken breasts, boneless and skinless
1/3 cup of flour
2 tsp of canola oil
1/2 cup of apricot preserves
1/2 cup of fat-free, low-sodium chicken broth
1 tbsp reduced sodium soy sauce

Method

Take a plate and sprinkle it with flour. Dredge the chicken breasts in the flour. Take a large skillet and heat the oil on medium heat. Add the chicken pieces to the skillet and fry them for about 4 minutes till the chicken becomes brown. Reduce the heat to low. In a small bowl combine the apricot preserves, chicken broth and soy sauce before adding to the skillet. Cover the skillet and simmer for 15 minutes, until the chicken is done thoroughly.

The juices should run clear before you remove the skillet from heat. When done remove the chicken from the skillet and cover loosely with a foil to keep warm. Turn up the heat and cook the sauce for about 1-2 minutes until it reduces slightly and is thickened. Serve the chicken with the pan sauce.
