For Making The Tomato Sauce

1. Take a frying pan and add six table spoon olive oil to the pan and heat the pan in a medium flame.

2. Add one finely chopped red onion to the oil and sauté it for 10 minutes.

3. Include two cloves of finely chopped or minced garlic and one deseeded and chopped red chili and them for another five minutes. Make sure that you are not burning the garlic.

4. Add two 400 gram red plum chopped tomatoes to the pan and lower the flame. Stir the ingredients continuously till the sauce becomes thick. It takes around 50 minutes. Add salt and freshly grounded black pepper to the sauce to make the taste.

For Making the Beans

1. Take 250 gram dried cannelloni beans and soak it over night or take 410 gram of tinned beans and drain them and rinse well. If you are using the tinned beans then add the beans to the sauce in its end.

2. Take the beans in a large sauce pan and add enough water to cover the beans.

3. To this mixture add three cloves of mashed garlic and three sprigs of sage leaves. Add salt according to your taste. Let the mixture boil.

4. Once the bean boils then skim off any impurities or vegetation formed on the surface of the liquid. Lower the flame and cook the beans for 40 more minutes till they become soft and tender.

5. When the beans get cooks then drain the beans and discard the sage and garlic and keep it aside.

For Making the Sausages

1. Take one table spoon of olive oil in a frying pan and add 12 high quality sausages in to it. Brown the sausage well and drain it on a kitchen towel.

2. Now add the cooked beans and the browned sausages to the tomato sauce and stir well. Cook the entire contents for 15 minutes till the beans becomes soft and the sausages are cooked thoroughly. By the time the sauce becomes thick and rich.

3. Add black pepper powder and salt to taste and garnish the dish with sage leaves.

Now your Sausage casserole with beans is ready to serve.
