Ingredients:

200 grams of sugar
250 ml of water
a 3-inch cinnamon
1 tsp of cinnamon powder
150 grams of coconut, scraped
4 eggs
750 ml of milk
50 grams of cashew nuts and cherries, chopped

Method:

Mount a saucepan on the flame with the water, cinnamon and sugar in it. Set it to a boil on medium flame. Once it begins to boil reduce flame to low and let it boil for another 5 minutes. After that add the coconut and cinnamon powder to it and cook on low flame for 5 minutes combining everything together. Add the milk and cook till the mixture becomes thick in consistency.

Stir continuously to avoid the mixture sticking to the bottom of the pan. When done remove from heat and set to cool at room temperature. In a separate bowl break the eggs and whip till soft mounds rise. Mount a pot on low flame and add the beaten eggs to it. Add the coconut and milk mixture to it and stir to mix evenly. Cook till the mixture becomes thick like custard. Always keep the flame low else the eggs will become scrambled. When done remove from heat, cool and then transfer to a refrigerator to chill. Garnish with the chopped cashew nuts and cherries and serve.

Peach and Custard Bake

Serving: 4 persons
Prep Time: 10 minutes
Cooking Time: 30 minutes

Ingredients:

4 egg yolks
250 ml of milk
2 tbsp of custard powder
500 ml of fresh cream
800 grams of peach

Method:

Take a mixing bowl and combine the egg yolks and sugar till it forms a creamy mixture. Set aside. Take another bowl and make a mixture of the custard powder and 4 tablespoons of milk. Pour this in the bowl containing the beaten eggs and whisk. Mount a non-stick pan with the remaining milk and cream and set to a boil.

Add the egg and custard mixture to the boiling milk and cook over low flame. Keep stirring till the mixture thickens. When done pour into an ovenproof glass bowl and place the peaches on top. Grill in the oven for 2-3 minutes. Serve.
