I am a complete foodie and love experimenting with food a lot. So, one fine day I decided to try the combination of Mushrooms with mustard and trust me it worked. Mushroom with the strong taste of mustard will surely last a longer impression on your taste buds.

2 tbsp vegetable oil
200 g button mushrooms
1 cup spring onions (chopped in ½ cm pieces)
3-4 green chilies (slit)
2 cloves
1 tomato (diced in thin slices)
4-5 cloves of garlic (finely chopped)
5-6 black pepper corns (crushed not powdered)
3 tsp mustard seeds
¼ cup corn flour
1 dry red chili
½ tsp of turmeric powder
½ tsp of red chili powder
1 tsp of coriander powder
Salt to taste

Preparation time:

25-30 minutes

Preparing The Mushrooms:

Slice the mushrooms in two equal halves and cut of the stem. Make a batter using corn flour, little water and salt. Once the mushrooms have been cleaned, cover the slices with the batter and fry it in a pan until crispy.

Preparing The Mustard Paste:

To make the paste you can either do it traditionally on a grinding stone or a mixer grinder. Take 3tsp of mustard seeds, 1 dry red chili, 1 clove of garlic, little water and salt to taste. Make a thick paste and keep it aside.

Heat 2 tbsp of oil in a pan. To that add onions, slit green chilies, crushed pepper corns, 2 cloves, chopped garlic and fry it for 2-3 minutes until the onions change color and become transparent.

To that add the tomato slices. Sauté it until the tomatoes becomes soft and the oil separates. Now, add the mushrooms, turmeric powder, chili powder, coriander powder and salt to taste. Fry for another 3-4 minutes.

To that add the mustard paste and mix it well. Then add about half a cup of water, just enough to cook the mustard well. Cover it with a lid and cook it in low flame for five minutes gradually increasing the flame to medium for another 5-10 minutes until the mushroom is well cooked in the mustard paste.

Once cooked, you can serve it with plain rice or noodles.
