Recipe Ingredients

Chicken- 1 kilo
Onion-4 numbers
Turmeric powder-1/2 spoon
Red Chili powder-1/2 spoon
Pepper powder-2 spoon
Garlic-12 cloves
Ginger-2 small piece
Vinegar-1 spoon
Salt- as per your taste
Vegetable oil-100 gram
Cashew Nut -25 gram
Curry leaves- a bunch

Recipe Preparation

1) Clean the chicken and cut chicken into small pieces. Chicken pieces can be used with bone as it tastes better. Clean the chicken by washing it in warm water. Keep it aside.

2) Cashew nut should be soaked in water for 10 minutes. Then make a cashew paste by putting it in a Mixie. This paste should be kept separate.
Cut the Ginger into small pieces and garlic into small pieces. Then make Garlic and Ginger paste by putting it in a Mixie. The paste should be kept separately.

3) Finely slice the Onion.Mix turmeric powder, red chili powder, pepper powder, salt, garlic -ginger paste with little vinegar and make a paste. Apply the paste on chicken pieces. Marinate for one hour.

4) Take a pan and add vegetable oil to it. Add onion to steaming vegetable oil. Make onion golden brown. Then make the flame simmer and add marinated chicken pieces to it. Then add cashew paste that has been kept aside earlier and you can add curry leaves to make pepper chicken rich. Mix all the ingredients well by stirring.

5) Make sure that chicken pieces are in simmer flame for eight minutes and stirring should be done in regular intervals. You can add more oil to make chicken dark fry. Add hot water after eight minutes and boil once again by keeping a lid over pan. One can increase the heat to make deep-frying but chicken should not be fried beyond a limit. Make sure that level of water comes down and turn off the gas.

6 ) The pepper chicken will taste well when lemon juice is sprinkled on it before serving. Serve hot with chapathi or parathas.One can add coriander leaves or mint leaves to make pepper chicken richer.
