Egyptian cuisine is similar to the Middle East food, but nonetheless it has some traditional elements added to it. Here is a simple authentic Egyptian food recipe that you can easily cook at home.

Kusheri

Ingredients
1 cup of lentils
2 cups of rice
3 clove of garlic
3 large onions
1 tablespoon cumin
1 can or 15oz of tomato sauce
1 cup of oil
½ teaspoon lime juice
½ mustard
2 tablespoons of vinegar
Chicken or vegetable stock
½ teaspoon sugar
Salt to taste

Method of preparation
Finely chop the onions. Mince the garlic. In a pan heat oil. When the oil becomes very hot, put the onions (keep aside a tablespoon of onion, to be used later for the sauce). Fry the onions until they become crispy brown. Remove the fried onions from the pan and keep then on paper towels to drain the excess oil. Now in a container boil the lentils in about four cups of water. Add a clove of minced garlic to it. Add cumin to the lentil and cook the lentil, until it becomes tender. When the lentil is cooked, remove the container from the fire and drain the water. Now cook the rice in chicken or vegetable stock. Add salt to taste. When the rice is cooked, add the lentil to the pot and mix the rice and the lentil.

Sauce
To make the sauce, add a tablespoon of oil to a pan. Add chopped onions, minced garlic and salt. Fry for about three minutes. Now add sugar and stir well. Put the tomato sauce and stir for a minute. Now add two tablespoons of vinegar, and little lime juice and mustard.

Serving Kusheri
On a dish put the rice and lentil mixture. On top of it put a small amount of the sauce. Now sprinkle fried onions over the food and your Kusheri is ready to be savored.
