Soak ½ measure of urad dhal for 2 hours. Add 1 measure of idly tari to this .Grind this with very little water. Your idly batter is ready. Allow it to stand for at least 4 hours before use. Then add salt according to taste.

Instructions to Cook idly

Take an idly cooker. Take each plate in the idly stand and add little quantity of oil to each one of them. Spread it evenly. Then add the batter to each one of them. Now keep these plates in the idly cooker or normal cooker and keep it on the stove for 20 minutes. Remember there should be some amount of water inside the idly cooker or the normal cooker before you keep the idly stand. Your idly is ready.

Note: For any idly, don’t put the cooker weight

Rava idly

Take 1 spoon of oil in a pan. Heat it. Add cumin seeds and wait till it turns black. Add 1 spoon of Bengal gram and urad dhal to this. Fry it till it turns golden brown. Now add rava to this and keep frying till it becomes slightly brown. Don’t wait till it turns completely brown. Leave this mixture to cook completely.

Now for every ½ measure of the rava you have to add 1 measure of curd. Add salt to taste. Add coriander leaves, fried cashew nuts, coconut and grated carrot. The batter is ready.

You can eat these idly’s with any type of chutney (coriander chutney, coconut chutney, mint chutney, tomato chutney) or with sambar.
