Gajar ka halwa
Ingredients for preparing Gajar ka halwa:

1 ¾ kg peeled and grated red carrots, 2 cups sugar, 7 tbsp ghee, ¼ cup milk, 400 gm crumbled mava, 20 blanched and sliced almonds

Method for preparing Gajar ka halwa:
Put carrots and milk into cooker.
Close cooker. Bring to full pressure on high heat. Remove the cooker immediately from heat. Release pressure with slight lifting of vent weight. Open cooker.
Place open cooker with carrots and milk on high heat. Add sugar. Cook till liquid dries up (approximately 15 minutes), stirring occasionally. Add mava and ghee. Cook till ghee shows separately (approximately 10 minutes), stirring constantly. Serve hot. Garnished with almonds.

Semiya payasam
Ingredients for preparing Semiya payasam:
½ cup ghee, 4 cups hot milk, 4 powdered green cardamoms, ½ cup crumbled vermicelli, ½ cup sugar, 1/3 cup cashew nuts broken into pieces, 1/3 cp raisins

Method for preparing Semiya payasam: :
Heat ¼ cup ghee in cooker for about 2 minutes. Add vermicelli. Stir and fry till golden brown (approximately 3 minutes). Add milk and sugar. Stir till sugar is dissolved.
Close cooker. Bring to full pressure on medium heat. Reduce heat and cook for 1 minute.
Remove cooker from heat. Reduce pressure by placing cooker in basin of cold water for about 2 minutes.
Open cooker. Add cardamom powder.

Place cooker on high heat. Cook till payasam is slightly thickened (approximately 3 minutes), stirring constantly.
In a pan, heat remaining ghee for about 2 minutes. Add cashew nuts and fry till golden brown. Add raisins. Stir for a few seconds and pour into payasam. Stir and serve hot.
