1 kg of mutton, made into 1 1/2-inch cubes
6 medium sized onions
2 tbsp of chopped ginger
1 tbsp of chopped garlic
3/4 tsp of chopped cilantro
1/2 tsp of fenugreek seeds
1 tsp of fennel seeds
1/2 tsp of cumin seeds
1 tsp of mustard seeds
1 tsp of turmeric powder
9-10 red chilies whole
1 1/2 tsp of red chili powder
4 1/2 medium tomatoes
7 cloves
1 tsp of onion seeds
8 tbsp of mustard oil
Salt to taste


Wash the mutton pieces thoroughly by placing under running water. When done keep aside in a bowl, covered. Cut the onions into fine pieces. Grate the tomatoes to make a thick puree but do not throw away the skin. Roast all of the whole spices (separately). Transfer all of the roasted spices to a grinder and grind coarsely.

Set a pot on medium heat and heat the oil till smoke arises from the oil. Reduce the flame to low and let cool. Again increase the flame to medium and add the onion pieces to the oil. Fry the onions until they become brown in color. Add in the ginger and garlic pieces and saute for about 2 to 3 minutes before adding in the ground spices. Combine well with the onions. Fry for about a minute and then add in the mutton pieces. Increase the flame to high and stir fry till the mutton pieces become brown on all sides. Reduce flame and add in the tomato puree (with the skin), the turmeric powder, salt and red chili powder and combine together.

Cook till the oil separates. Now add in about 3 cups of water and set the curry to a boil on medium heat. Keep the pot covered to cook faster. After about 15 to 20 minutes remove the cover and check if the mutton has been fully done. If not add in a little water and cook for some more time. When done remove from heat. Serve with the chopped cilantro leaves spread all over.
