1 whole chicken, skinless, boiled and made into cubes
1 can of low salt tomato juice
1 box of Weight Watcher’s instant chicken broth
2 medium onions
3 stalks of celery
5 carrots
6 potatoes
1/2 box of frozen peas
1/2 box of frozen corn
Pepper to taste
Salt to taste
You may also add any other seasoning you prefer


Wash the vegetables thoroughly and cut them into bite-size pieces. Take a large pot and set it on heat. Add all the vegetables to it along with all the packets of instant chicken broth and tomato juice. Add the seasonings. Add water, if required, to cover the vegetables. Cook this on medium heat until the vegetables become tender. When it is done add the boiled chicken cubes to the broth. Cook for another 30 minutes. Serve hot.

1/2 pound of chicken breast, skinless and boneless
1 tsp of canola oil
1/4 cup of onions, chopped
1/2 cup of chopped carrots
1/2 cup of celery, chopped
4 cups of chicken broth, low sodium
1/2 cup of uncooked long-grain white rice
1/2 tsp of dried rosemary
1/2 tsp of ground black pepper
Place the chicken breast on a grill pan over medium-high heat and cook for about 3 minutes on each side till they are thoroughly done. Remove from heat and cut the chicken into 1/2 inch-thick pieces. Now heat the canola oil in a large pot over medium heat. Add the onion, carrot, and celery to the oil and saute till the vegetables are tender. Pour in the chicken broth over the vegetables and add the rice, rosemary, and the ground black pepper to it. Bring it to a boil and then reduce the heat and simmer for 20 minutes. Now add the chicken pieces and simmer another 5 minutes. Serve hot.
