You may think this is very difficult to prepare. But in reality, it is very easy to prepare this dish. Follow these instructions and you have your Masala Dosa ready.

Instructions to prepare the batter

Soak rice grains and urad dhal in 4:2 ratios in water overnight. Add 1 measure of beaten rice- Gatti avallakki. Take only the solid part of the soaked mix and put it in a mixer with a very little amount of water required for it to become a thin paste. You can use the soaked water only for this. Add two spoons of powdered sugar to this. Keep this Dosa batter aside for 4 hours. Add salt to taste.

Instructions to prepare dosa on the pan

Take a non-stick pan and heat the pan. Spread one ladle full of batter on the pan and spread it so that it will be round in shape. If you need the dosa to be very crispy you can put groundnut oil or olive oil around the Dosa. This is not mandatory. If you are diet conscious don’t put any oil at all. That is the very reason why I said use a non-stick pan. Remember to turn the dosa both ways till it turns golden brown. Your yummy dosa is ready is eat.
You can eat this with mint chutney, coriander chutney, coconut chutney, Onion-potato playa etc.

Instructions to do the chutney

Take one bowl of grated coconut. Add salt to taste. Add green chilies to taste. Generally for one bowl of grated coconut 5 green chilies will be good enough. Add a very little quantity of asafetida-hing for good taste. Add ¼ teaspoon of tamarind powder.

To this if you want mint chutney, add little mint leaves to taste and coriander leaves for color.
If you want only coriander chutney add only coriander leaves.
If you want coconut chutney, do not add either mint or coriander leaves.

Put it in the mixer and make it as a nice paste. This is an awesome combination for dosa, rotti, pongal and other dishes.

Instructions to do Onion-potato palya

Peel the skin of 4 potatoes and cut each potato into 12 pieces. Microwave these potatoes for 20 minutes with water and a very little amount of salt added to it. Remove the water and mash it using a masher. Keep it aside.
Remove the skin of onions and cut it into small pieces.
Take a pan. Add one spoon of groundnut oil or olive oil. Heat it. Add one spoon of cumin seeds. You can hear to the cumin seeds making sounds and turning black. Allow it to become completely black. If it is still red in color it will be bitter to taste. So wait till it becomes black but don’t allow it to char. Add onions to this and fry till it becomes golden brown. Add the mashed potatoes to this. The salt is already present in the potatoes. Add washed and cut coriander leaves to this.
Your onion-potato palya is ready.
