Dr. Devajit Borthakur, a scientist associated with India’s Tea Research Association in Jorhat, Assam, found that milk proteins reduce the effectiveness of fat busting compounds present in tea leaves.

Thearubigins and theaflavins found in tealeaves impair fat absorption in the gut, leading to lower level of harmful cholesterol in the blood. Laboratory studies have shown that regular tea consumption could prevent obesity.

According to Dr. Borthakur, proteins in cow’s milk combine with these beneficial fat lowering compounds to form complexes incapable of eliminating fat from the digestive tract.

Currently, scientists of the Tea Research Association in Assam are trying to create new tea plant breed with higher and more powerful thearubigin and theaflavin contents, which could not be entirely neutralized by milk.

In another study, researchers in Japan found that tea leaves extract obstructed fat absorption in the gut of rats on a fat rich diet. Tea leaves extract even reduced overall body fat. The findings, reported in the journal Nutrition, showed that tea could inhibit fat build-up in the liver.

Accumulation of fat in the liver, a condition known as non-alcoholic fatty liver disease, is a common cause of liver malfunction. The study suggests that regular tea intake might lower the risk of developing fatty liver. According to the Japanese study team, black tea is most effective in preventing fat absorption in the intestines. The fermentation process that converts green tea into black tea, endows black tea with powerful fat busting compounds.

Unfortunately, the beneficial properties of black tea are neutralized by adding milk to tea. In an earlier study, Dr Lisa Ryan at the Functional Food Centre at Oxford Brookes University found that compared with tea with whole milk or semi-skimmed milk, tea with skimmed milk had lower levels of polyphenols.

In a previous animal study, researchers found that tea without milk significantly improved insulin sensitivity of the body cells. However, when 90 grams of milk was added to a cup of tea, the positive effect of the beverage dropped by almost ninety per cent.

In a German study, researchers found that people who drink black tea have a lower risk of experiencing cardiovascular disease than people who prefer tea with milk. Catechin, present in tealeaves, triggers nitric oxide secretion. Nitric oxide promotes relaxation of blood vessels. Casein, a protein in animal milk, neutralizes the beneficial property of catechin.

However, some health experts claim that tea with milk is beneficial for people prone to acid reflux. Milk and sugar in tea might impair excessive secretion of gastric acid associated with heartburn and stomach discomfort. People with stomach problems might drink mildly brewed tea or darker oolong tea.
