Khajoori arvi

Ingredients:

1 kg arvi, 3 tbsp lemon juice, 1 tsp amchoor, ½ tsp black pepper powder, ¼ tsp ajwain, 1 tbsp sauf, 1 tbsp powdered til, ½ tbsp grated coconut, 150 gm oil, 1 tsp salt, 1 tsp garam masala, 1 tbsp besan, ½ tsp red chili powder, 1 ½ tbsp butter

method:

Wash the arvi well and place them into boiling water in a pan. When arvi get half boiled, take it off from flame. Keep it aside to cool down.

Peel off the skin of arvi and leave it to get dry for 10 minutes.

Heat oil in pan and fry all the arvi in it till they turn golden in color.

Heat oil again and stir fry besan in it.

Make a slit in arvi with the help of knife. Pour powdered seasonings, salt, besan, chilies, amchoor in a bowl and fill them nicely in the arvi.

Grease the grilling dish with butter and place all the arvi and grill it for 10 minutes.

Afterwards pour lemon juice on them and serve hot.

Kofta kadhi

Ingredients

100 gm curd, 250 gm gourd, 100 gm besan, 100 gm oil, 1 garlic clove, 2 onions, 4 green chilies, 1 inch ginger piece, bunch of curry leaves, 1 tsp mustard seeds, 1 tsp methi seeds, pinch of hing, 1-2 cloves, ½ tsp saunf, ½ tsp red chili, coriander leaves, ½ tsp black pepper, 1 tsp salt

Ingredients

Grate the gourd and squeeze water from it.

Add besan, sauf, salt, green chilies, coriander leaves and make nice dough. Prepare small balls from this dough and fry them in oil.

Add curd in besan.add salt to it and cook in a pan for 5 -10 minutes on low flame.

Add prepared kofte in it.

Bring it to a boil.

Heat oil in another pan and splutter curry leaves red chili powder, cloves, black pepper, hing and pour over the prepared curry.

Serve hot.
