Rajma lazztdaar
200 gm rajma, 4 cups water, ½ tsp red chili powder, ¼ tsp turmeric powder, ¼ cup paste of onion, tomato, ginger and garlic, 3 tbsp coriander leaves

Soak rajma for 5-6 hours or overnight. Wash and pressure cook with water for 10-15 minutes.
In karahi, add the paste of ginger, garlic, tomato and onions. Fry them for 3-4 minutes and keep on stirring. Then add red chili powder and turmeric powder to it and fry them for anther 3-4 minute.
Add the cooked rajma to the mix and stir well. Bring to a boil and simmer for 10 minutes.
Serve hot garnished with coriander leaves.

Spicy potatoes

1medium onion, 5 gm ginge, 3 sticks cinnamon, 1 ½ kg small even sized potatoes, 4 cloves, 2 cups water, 1 ¾ tsp turmeric powder, 2 bay leaves, 1 tsp cumin seeds, 2 cups mustard oil, 1 medium chipped onion, 1 large chopped tomato, 3 ½ red chili powder, 2 ½ tsp cumin seeds, 1 ½ tsp coriander leaves, 1 tbsp salt, 1 tsp sugar, 2 tbsp ghee

Grind onion and ginger to a nice paste.
Also grind cloves and cinnamon together and form a powder.
Pour 1 cup of water into cooker along with potatoes.
Close cooker and bring to full pressure then reduce heat and cook for another 1 minute. Remove cooker and release pressure.
Open and peel potatoes. Sprinkle ¾ tsp of turmeric powder on potatoes and mix well.

Group potatoes into 3 batches. Heat oil in frying pan and fry each batch till golden brown and then remove.
Heat ¼ cup of oil in large pan, add bay leaves and cumin seeds to it. Stir for few seconds. Add chopped onions and ground paste and fry for 2 minutes.

Add tomatoes, coriander powder, salt, sugar, chili and cumin powder and remaining turmeric. Cook till oil shows separately, stirring occasionally.

Add potatoes. Stir carefully to evenly coat potatoes with masala. Add powdered spices and remaining water. Stir once. Reduce heat to low and simmer for about 5 minutes, stirring once.
Remove pan from heat. Pour ghee evenly over potatoes. Serve hot.
