Mutton Chili Fry

Serving: 8 Persons

Ingredients

1 1/2 kg of Mutton, washed thoroughly and cut into small cubes
15 of Red chilies, dry
3 tbsp of Coriander seeds
1 1/2 tsp of sliced Ginger
1 1/2 tsp of Garlic, finely chopped
4 medium-sized Onions, finely sliced
6 Cardamoms
5 Cloves
1 big stick of Cinnamon
1 tsp of Turmeric powder
1 cup of fresh curd
1 tsp of lemon juice, freshly made
3 tbsp of fresh Coriander leaves, chopped
6 tbsp of Olive oil
Salt to taste

Method

Roast the dry red chilies till they turn dark in color in one teaspoon of oil in a small pan. Keep it aside. Similarly fry the coriander seeds, garlic and ginger all separately, in one teaspoon of oil in a small pan. Keep these fried spices aside. Now take a large pan and heat the remaining oil in it on medium flame. Fry the onions till they turn golden brown in color and are crisp. Keep the fried onions aside. Now add the cloves, the cardamoms and the cinnamon to the same pan with the heated oil and fry them for a minute.

Put the mutton pieces, the turmeric powder and salt to it and mix well. Cover the pan and cook till the mutton is half done. To avoid the mutton from sticking to the pan pour a little water on the lid of the pan while cooking. Then pour in the curd, mix thoroughly with the mutton and spices and cook this on low heat till the mutton becomes tender. Add a cup of warm water if required. Remove pan from heat. Mix in the lemon juice and the fried onions. Garnish with the chopped coriander leaves before serving. Serve with steamed Rice or Naan.

Ingredients

2 pounds of mutton, washed thoroughly and cut into small pieces
2 large-sized Onions, chopped
4 tsp of Ginger-garlic paste
1 tsp of Coriander powder
100 grams of Curd
2 tsp of Red chili powder
1/4 tsp of Cumin powder
3/4 tsp of a mixture of ground cardamom, cinnamon and cloves
1/2 powdered fennel seeds

Method

Mix the meat along with all the ingredients except the onion in a cooker to coat all the meat pieces well with the spices. After frying this for 5 minutes
add 1/2 cup of water. Close the lid and cook on pressure for 15 minutes on medium heat. In a separate pan fry the onions till they turn golden brown in color. Add the meat along with the gravy to the fried onions and let boil. Cook till the gravy thickens and the oil separates. Serve hot garnishing with the coriander leaves.
