Nisteachi coddi
(Fish curry in goan style)
Ingredients:

5 whole dry red chilies, ¾ grated coconut, 2 medium promfret cleaned and cut into 2 ½ c, thick pieces, 1 tsp cumin seeds, 1 tbsp coriander seeds, 1 tbsp salt, 1 ½ cups water, 4 tbsp vegetable oil, 1 large grated onion, ½ tsp turmeric powder, 15 gm tamarind soaked in ½ cup hot water for 15 minutes and pulp extracted, 1 sprig curry leaves, 2 medium tomatoes blanched and chopped

Method:
grind together red chilies, coconut, cumin and coriander seeds into a paste, adding a little water (1/4 cup) from time to time.
Heat oil in cooker for about 2 minutes. Add onions and fry till golden brown.
Add coconut paste and turmeric powder. Fry till oil shows tomatoes are pulpy, stirring occasionally.
Add green chilies, tamarind pulp, salt and remaining water. Bring to boil. Add fish. Stir carefully.
Close cooker. Bring to full pressure on high heat. Reduce heat and cook for two minutes.
Remove cooker from heat. Release pressure with slight lifting of vent weight.
Open cooker. Serve hot.

Beef curry in Mangalore style
Ingredients:

75 gm ginger, ¼ cup water, 40 flakes garlic, 4 medium tomatoes cut into quarters, ½ cup vegetable oil, 4 tsp salt, ½ tsp turmeric powder, 1 ½ kg boneless beef cut into 4 cm cubes

Method:
Grind together ginger and garlic into paste.
Heat oil in cooker for about 3 minutes. Add ginger-garlic paste. Fry for about 2 minutes. Add chilies, Meat and turmeric powder. Stir and fry for about 2 minutes. Add all other ingredients. Stir well.
Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 25 minutes.
Remove cooker from heat. Allow to cool naturally.
Open cooker serve hot.
