Ingredients

1 pound of pork tenderloin
2 tbsp of Chinese rice wine (alternately you can also use dry sherry)
2 tbsp of soy sauce
2 tbsp of hoisin sauce
1 tsp of sesame oil
2 tsp of grated ginger
2 cloves of garlic, minced

Method:

Take a large bowl and mix together all the ingredients except the pork. Then add the pork and cover evenly with the mixture and marinate the pork for 2 hours, covered in a refrigerator. Preheat the oven to 400 degrees F. Drain the pork, reserving the marinade. Place it on a rack over a roasting pan and roast it for about 30 minutes. Turn the pork occasionally and baste with the reserved marinade. The pork should be just pink inside. When completely done remove the roasted pork from oven and slice it into 1/4 inch pieces. Serve hot with a dip or sauce of your choice.

Hot Tip: You could also serve a good wine to go with it.

Pork Chop Casserole

Serving: 2 Persons
Prep Time: 30 minutes
Cooking Time: 50 minutes

Ingredients:

4 pork chops, large
1 pkt of noodles
1 1/4 cups of water
1 cup of breadcrumbs, toasted and buttered
1/2 cup of catsup
1/2 cup of chopped onion
Salt to taste
Pepper to taste
1 tbsp of butter
2 tbsp of oil

Method:
Cook the noodles as the directions given in the packet. When done, drain and keep aside. In a skillet heat some oil and fry the four pork chops on both sides on medium heat. Fry until they are almost cooked. Add salt and pepper when done as required. Take a large mixing bowl and combine together the chopped onion, catsup and the cooked noodles in it. Grease well a casserole dish and place the pork chops in the dish. Cover with the onion-catsup-noodle mixture and top with the breadcrumbs. Bake this at 350°F for 50 minutes. Serve hot.
