This healthy soup is made with carrot and potato. The parsley leaves add a refreshing flavour to this soup.

Ingredients:

Carrots- 450 grams (cut into rings)
Vegetable stock- 900 ml
Oatmeal- 25 grams
Chopped onions- 175 grams
Potato- 100 grams (cut into rings)
Coriander leaves- 1 bunch (finely chopped)
Chopped Parsley leaves- 1 tablespoon
Salt- To taste
Black pepper powder- ½ teaspoon
Cream- 150 ml

Method of Preparation:

1. Take a big pan for cooking and put it on the flame. Now put the carrots, oatmeal, chopped onions, potato, coriander leaves, parsley leaves, salt, black pepper powder and vegetables stock into this pan. Mix all the ingredients nicely. Let it cook for 30 minutes at low flame.

2. Put the vegetable mixture in the grinder when it gets boiled. Make a smooth paste.

3. Pour the soup in the serving bowl and put some cream on the top.

4. Serve it hot along with bread.

Apple Soup:

The apple soup has a sweet and tangy flavour. It is made little spicy with the addition of black pepper powder which gives it a distinct taste. Apple is rich in antioxidants, Vitamin B, Calcium, iron, etc. that makes it a very nutritious. Enjoy this healthy soup with your family.

Ingredients:

Grated Apple- 1
Grated carrot- 1 (small)
Groundnut oil- 2 tablespoons
Wheat flour- 25 grams
Curry powder- 1 tablespoon
Vegetable stock- 1.5 litres
Raisins- 25 grams
Sugar- 1 teaspoon
Lemon juice or vinegar- 2 teaspoons
Salt- To taste
Black pepper powder- 1/2 teaspoon

Method of Preparation:

1. Put some groundnut oil in a pan and let it heat for 1 minute. Now add the grated apple and carrot to this oil and fry for 2-3 minutes.

2. Prepare a mixture with the curry powder and flour. Mix them nicely together. Add this to the apple and carrot.
Pour the vegetable stock into the pan slowly and keep on stirring continuously. Allow it to cook for 10-15 minutes.

3. Now add the salt, pepper powder, raisins and lemon juice to this mixture and stir gently. Let it cook in low flame for 45-60 minutes.

4. Put the apple mixture in the mixer to make a smooth paste.

5. Pour this in the serving bowl. Sprinkle little black pepper powder on the top.

6. Serve hot.
