The best and the common pizza cheese is the Mozzarella. Although, Mozzarella is produced primarily from cow milk but the best quality traditional Mozzarella are made from buffalo milk. Nowadays, the two main types of Mozzarella are the low moisture Mozzarella and the high moisture Mozzarella.

The former variety has moisture content below 50% and the latter variety has over 52% moisture content. The low moisture Mozzarella has a long shelf life, but the soft texture of the high moisture Mozzarella makes it the preferred choice of aficionados of freshly baked Italian pizza. Many pizza makers prefer the fresh Mozzarella that comes in the shape of small balls. However, fresh Mozzarella has very low shelf life.

After Mozzarella, Provolone is the preferred cheese for pizzas. This is a firm cheese with semi-hard texture. It has a golden exterior and a creamy interior. It has a smoky flavor. The moisture content of Provolone is below 45%. Dolce is mild flavored variety of Provolone, between 2 and 3 months old. The stronger flavor is attained by Provolone aged between 6 and 12 months. This variety of Provolone is known as Piccante.

Traditionally Parmesan cheese is made by mixing skimmed milk made in the previous evening with fresh morning milk. Parmesan cheese has a light yellow color and nutty flavor. In order to attain its distinct color, flavor and texture, Parmesan cheese should be over 10 to 12 months old. However, the best variety of Parmesan cheese, such as, Vecchio and Stravecchio are over three years old.

Best quality Romano cheese is made from ewe’s milk. Fresh Romano has a strong flavor and has high moisture and fat content.
