For Tortilla Chips:
100 grams of maize flour
100 grams of refined flour
50 grams of butter, unsalted
1/2 cup of milk
Salt to taste
Oil for frying
Water, as needed

For the salsa

500 grams of tomatoes, blanched
2 green chilies, seeds removed
4 tbsp of chopped cilantro leaves
2 tbsp of cumin powder
2 tbsp of tomato sauce
Salt to taste
3 cloves of garlic, minced


For the Tortilla Chips

Take a large mixing bowl and in it mix together the maize flour with the salt and refined flour. Next, add in the butter to the mixture and combine till it becomes flaky. Gradually add the milk and water, as required, to the mixture and knead into dough. Divide the dough into equal parts and roll them out to make flatbreads. Cook them on a griddle and let them cool. See that they are half done. When the flatbreads have cooled, cut them 8 triangular wedges. Deep-fry them in the oil and drain on paper towels. When they have cooled serve with the salsa.

For the salsa:

Chop the blanched tomatoes and mix the pieces with the de-seeded chilies, cilantro, cumin powder, minced garlic, salt and the tomato sauce. Transfer this to the food processor and process. It should be well blended. Refrigerate for at least an hour to let all the flavors blend.

Serve the tortilla chips in a plate with a small bowl of salsa.

Cheese Tortilla

Serving: 2-3 persons

Cooking Time: 5 minutes


For the Tortilla
250 grams of refined flour
1 egg
1/2 tbsp of salt
30 ml of water
1/4 tbsp of sugar

For the spread

1 1/2 tbsp of refried beans
20 grams of mozzarella cheese blend
1 tbsp of chopped onions
1 tbsp of chopped tomatoes
10 ml of refined oil
1 tbsp of shredded lettuce
1 tbsp of sliced jalapenos
1 tomato, diced

For Garnish

Sour cream


Mix together all ingredients for the tortilla in a bowl and form dough. Roll it out to form thin bread.

Now spread the beans, cheese, onions and tomatoes all over the bread. Fold over into half and press gently. Heat some oil in a frying pan and put the folded tortilla in it. Saute for 2 minutes on one side before turning over and frying for another 2 minutes. Remove to paper towels to drain excess oil. Cut the tortilla into 4 wedges and place in a serving plate. Place the shredded lettuce, diced tomatoes and jalapenos on the plate. Garnish with some sour cream and a dollop of guacamole.
