Ingredients:

8 slices of bacon
1 1/2 tbsp of butter
1 tbsp of olive oil
8 chicken breasts, boneless and skinless
1 large onion, finely chopped
3 cloves of garlic, minced
1 tsp of salt
1/4 tsp of freshly ground pepper
1 3/4 cups of shredded cheddar cheese

Method:

Mount a skillet on flame and cook the bacon about 6 minutes until it is crisp. Remove the bacon from heat and crumble it. Set aside. Pour bacon dripping out of the skillet and add the butter and olive oil to the skillet and heat over medium flame. Add the chicken pieces to the skillet and saute. Turn once, and cook until the chicken is thoroughly done and no longer pink in the center. When done transfer the chicken to an ungreased 12×8? baking dish.

Now heat the bacon drippings in a pan over medium heat. Add the onion and garlic and cook till the onion turns translucent. Stir in the salt, pepper, and the cooked bacon. Spoon the prepared bacon over the chicken breasts and sprinkle the cheese all over. Bake at 350 degrees F for 15 minutes until the cheese melts.

Sautéed Chicken with Lemon Garlic Sauce

Serving: 4 persons

Cooking Time: 45 minutes

Ingredients:

4 chicken breast halves
1 cup of chicken broth
1 cup of intensely flavored olives, pitted
2 tbsp of olive oil
2 cloves of garlic, minced
2 tbsp of freshly made lemon juice
salt to taste
pepper to taste
2 cup of cooked rice, fine-grained and scented

Method:

Take a bowl and put the chicken pieces to it. Add salt and pepper and combine well with the chicken. Set aside. Heat the oil in a skillet over medium heat. Add the garlic and saute it for a minute before adding the chicken. Saute the pieces for 5 minutes on each side so that it is browned on all the sides. Remove from the skillet. Pour the chicken broth and set to boil. Scrape any residual browned bits. Add in the olives along with the browned chicken.

Cover the skillet and set to simmer for 30 minutes. Remove the chicken from the broth and place it in a bowl. Keep covered to retain the warmth. Add the lemon juice to the broth in the skillet and cook till the liquid reduces to a third of its original amount. Return the chicken to the pan and cook for a minute. Place on a platter. Serve with the rice.
