Seafood Stew Recipes - How To Make Seafood Stew & Steps To Make Seafood StewThis stew is a delight for seafood lovers. It uses clams, prawns, and white fish. These taste really good with garlic, tomatoes and chillies that has been used in this recipe. You can eat this stew with bread or rice.

Ingredients:

Clams (400 gms)
Prawns (400 gms)
White fish (400 gms; cut into bite sized cubes)
Peppers (2-3 in count)
Fennel bulb (2 in count)
Tomato purée (2 tbsp)
Tomatoes (2 pounds)
White wine (300 ml)
Fish stock (300 ml)
Olive oil (3 tbsp)
Garlic Cloves (2-3 in count)
Red chillies (2 in count)
Paprika (1 tspn)
Handful of fresh parsley
Salt
Black pepper

Method:

Begin by chopping the vegetables and rest of the ingredients. Mince the garlic cloves roughly. Tear the fresh parsley leaves into small bits. Use hand if possible, else you can also chop them roughly with a knife.

You will need 2-3 peppers, try to have one of each colour; i.e. red, yellow and green. Slice the peppers into thin long strips. The length of the strips should be around 2 inches. Chop the fennel bulbs also finely.

You can also mince them; this helps make a thick and stocky gravy. The tomatoes also should be chopped roughly into small pieces. Again this helps make the gravy chunky. All your pre cooking groundwork is over now.

Next, heat the olive oil in a pan or large skillet. It would be best if you can get a large wide pan. This allows all ingredients to get cooked and browned properly. Add the minced garlic and let it brown for a few seconds.

When it starts to turn brown, add the chopped fennel. Ensure that you do not wait for the garlic to turn dark brown. If you do this, then by the time you add the fennel the garlic will begin to char a little.

Hence, it is best to add fennel when the garlic is only slightly brown. Toss the garlic and fennel for about 5-7 minutes. They will become translucent in sometime. It is time now to start adding the rest of the ingredients.

Throw in the peppers first and let them cook for 5-7 minutes. They will begin to soften a little bit. Next, add the red chilies, paprika and white wine. Let all the ingredients simmer. Reduce the heat and bring all the ingredients to boil. This should take another 5 minutes.

Now add the chopped tomatoes to this simmering blend. Add the fish stock and parsley. If required, you can also add some water. Then, add the clams to the simmering pot. Cover the pot and let the clams cook for around 7 minutes. You have to wait for the clams to open up.

Lastly, add the white fish, prawns, salt and pepper. Let all the ingredients simmer for around 5 – 10 minutes. Turn off the gas when they are well done.
