Then, add lemon juice to it and mix it well
Now, add fresh cream to the sautéed mixture and blend it to a fine consistency
You can strain this mixture through a sieve if you wish
To it, add salt and pepper for taste.

Mix it well for about two minutes. Keep the pan aside once the mixture comes to a boil
Refrigerate the soup for at least an hour
Serve cold soup in a soup bowl garnished with cucumber slices and red pepper strips. You can also have it with some soup sticks.

Nutritional Information

Cucumber is one cool veggie that has high water content in it and is best to keep your skin glowing and healthy. If you like cucumber, you wouldn’t mind having it raw or even in the form of soup, isn’t it? Well, this veggie is something that people on diet mostly opt for.

In fact, it’s because of its high water content and crunchiness that people love having cucumber in summer, especially when its chilled. If you’re on a strict diet, here’s a tip for you: You can skip sautéing the onion and cucumber and instead blend them raw for the low-cal version.
