So, summer season is finally back! If you’re one of those people who can’t stop singing ‘Feeling Hot Hot Hot,’ here’s some good news for you guys. Well, when we say good news, we mean here’s one healthy recipe that’s sure to make you feel refreshed and nice.

Cucumber, as we all know is known for its cooling factor and that’s exactly what this recipe is all about. We suggest you try this recipe for dinner, as its best to have something light before going to bed. Here’s how you make it:


Chopped spring onions – 3
Peeled and sliced cucumber – 3
Fresh dill leaves – 500 g (optional)
Lemon juice – 15 ml
Fresh cream – 250 ml
Cucumber slices – 6
Red pepper cut into long thin strips – ½
Black pepper to taste
salt to taste
Olive oil – 10 ml


Heat olive oil in a pan and sauté the spring onions, cucumber and dill leaves for about two minutes
Then, add lemon juice to it and mix it well
Now, add fresh cream to the sautéed mixture and blend it to a fine consistency
You can strain this mixture through a sieve if you wish
To it, add salt and pepper for taste.

Mix it well for about two minutes. Keep the pan aside once the mixture comes to a boil
Refrigerate the soup for at least an hour
Serve cold soup in a soup bowl garnished with cucumber slices and red pepper strips. You can also have it with some soup sticks.
