Recipe Ingredients

1¾ cups all-purpose flour
2 bananas (pick out ripe bananas as they are easier to squish)
2 teaspoons Splenda
2 teaspoons baking powder
1 teaspoon cinnamon (ground)
¼ teaspoon salt
1½ cups milk (use non-fat milk to lower the fat content further)
1 large egg
¼ cups unsweetened apple sauce

Recipe Preparation

1. Add flour, baking powder, splenda, salt and cinnamon together in a food processor or blender and mix well together. Alternatively, you can also mix them together using your hands.

2. Similarly, mix together squished bananas, egg, milk, and apple sauce in a blender or food processor and blend well.

3. Pour the flour mixture in a dish and make a hole in the middle of this mixture. Now, slowly add the banana mixture, all at once, into the flour and mix well. However, do not mix too well to get fluffy pancakes at the end. The batter should still contain some lumps to get the desired fluffiness.

4. Add about ¼ cups of the prepared batter onto a greased non-stick pan or hot griddle. Cook for about 1-2 minutes on both sides till the batter gets cooked properly.

Serve the pancakes topped with margarine, sugar free syrups, peanut butter, sugar free jam, non-fat whipped cream, or unsweetened apple sauce, or anything else that you like. You will surely enjoy the nutritious, delicious, and yet low-calorie pancake recipe. You can also use the same batter to make delicious waffles. Simply add the appropriate amount of batter in the waffle iron and cook yummy, mouth-watering waffles.
