2 chicken breasts diced into equal size;

A cup of fresh shiitake mushrooms (dried can be used too provided you soak it in hot water for at least 3 hours before cooking);

3 small pieces of ginger cut into fine strands;

Fresh coriander for seasoning;

3 -4 cloves of garlic;

2 tsp corn starch dissolved in 3 tbsp of spy sauce;

3 tbsp cooking sherry

For Tamarind Sauce:

1 ½-2 tsp tamarind paste;

1/3 cup of water;

2 tsp of sugar;

2 tsp of fish sauce;

Fresh chilies depending on how much spicy one wants the dish to be

Method Of Preparation:

Mix all the ingredients written under tamarind sauce and keep it aside.

Now marinade the chicken pieces with the corn starch and soy sauce mixture.

In a wok, heat 3-4 tsp of oil and add ginger, garlic, mushrooms and the chicken. Mix it well.

Stir fry it till it turns dry and then add the cooking sherry. Stir fry again for 2 minutes or so.

Then add the tamarind sauce 1-2 tsp at a time. Continue stir frying till all the sauce is finished which would take approximately 10 minutes in total.

After chicken is cooked, remove from heat. Taste the dish. Add more fish sauce if required. Add more chili to make it spicier. If it is already salty enough, add little lime juice to balance it out.

Season with fresh coriander and serve with Thai jasmine rice or have it simply!
